Directions

  1. Preheat your oven to 400°F and adjust the oven rack to the middle position.
  2. Place 1 cup of whole cherry tomatoes in the bottom of a 2-quart baking dish or cast iron skillet. Drizzle with olive oil and top with pesto, minced garlic, and a pinch of salt and pepper. Toss to coat the tomatoes well.
  3. Bake the tomatoes for 15 minutes.
  4. While the tomatoes are roasting, mix together the sour cream and chopped basil in a bowl.
  5. Add the fresh mozzarella, provolone, and parmesan to the bowl and stir until well combined.
  6. Once the tomatoes are roasted, add the cheese mixture to the dish and gently toss with the tomatoes.
  7. Cut the remaining cup of tomatoes in half and arrange them on top of the cheese.
  8. Bake for another 20 minutes, or until the cheese is melted, the top is slightly golden, and the edges are bubbling.
  9. Just before serving, top with some fresh basil. Serve with your favorite bread, chips, or crackers.
