Creamy, Tangy & High-Protein Twist on the Classic
This cottage cheese egg salad is a healthier, low-fat version of the classic. It’s creamy, tangy, protein-packed and super simple to prepare. Perfect for breakfast, lunch, brunch, or a satisfying afternoon snack.

Ingredients
- 2/3 cup (140 g) cottage cheese
- 6 large eggs
- 5–6 tablespoons scallions or spring onions, finely chopped
- 2 tablespoons mayonnaise
- 1 1/2 teaspoons Dijon-style mustard (or to taste)
- 1/3 teaspoon fine sea salt
- Black pepper, to taste
- 1/3 teaspoon red pepper flakes
Instructions
1. Boil the eggs:
Place the eggs in a small pot and cover with water. Bring to a boil, then turn off the heat. Leave the eggs covered for 7–8 minutes (no peeking!).
2. Cool the eggs:
Drain, then place eggs in very cold water with ice cubes for about 2 minutes. Add more ice if needed to keep the water cold. Peel once cooled.
3. Chop and separate:
Slice each egg in half. Remove the yolks from 4 eggs and place in a bowl. Finely chop the remaining 2 whole eggs and the 4 egg whites.
4. Make the dressing:
Mash the yolks with 2 tablespoons cottage cheese, mayonnaise, and mustard until creamy (smoothness not required).
5. Assemble:
In a mixing bowl, combine chopped eggs, remaining cottage cheese, scallions, creamy yolk dressing, salt, pepper, and most of the red pepper flakes. Mix well. Adjust seasoning to taste.
6. Chill and serve:
Cover and refrigerate for 30 minutes before serving, if possible. Sprinkle with the remaining red pepper flakes before serving.
Notes
- Make-ahead: You can boil eggs up to 3 days in advance. Store peeled just before using.
- Texture tip: If your cottage cheese is too runny, mash it slightly with a fork to thicken before use.
- Storage: Keeps up to 2 days refrigerated in an airtight container. Not suitable for freezing.
