  • 1 pound chicken breast, diced Lean protein source.
  • 2 medium sweet potatoes, peeled and cubed Provides essential vitamins and minerals.
  • 1 cup rice (brown or white) Use your preferred type of rice.
  • 2 tablespoons olive oil For roasting sweet potatoes and cooking chicken.
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh greens (optional, for serving) For adding freshness.
  • Sliced avocado (optional, for serving) For extra creaminess.

Instructions

Preparation

  • Preheat the oven to 425°F (220°C).
  • Toss the cubed sweet potatoes with olive oil, garlic powder, paprika, salt, and pepper. Spread them on a baking sheet and roast for about 25-30 minutes or until tender.
  • While the sweet potatoes are roasting, cook the rice according to package instructions.
  • In a skillet, heat a bit of olive oil over medium heat. Add the diced chicken and season with salt and pepper. Cook until the chicken is browned and cooked through, about 7-10 minutes.
  • To assemble the bowls, divide the cooked rice into bowls, top with roasted sweet potatoes and cooked chicken. Add fresh greens and avocado if desired. Serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to four days. To reheat, microwave until heated through. Can freeze portions for up to three months. For added flavor, marinate the chicken beforehand and feel free to substitute rice for quinoa or cauliflower rice. Additional veggies can be included for more nutrition.
