Ingredients

  • ½ cup melted butter or oil

Glaze Ingredients

  • 1 cup powdered sugar
  • 2–3 tbsp milk adjust for desired consistency

Instructions

Preparation

  • In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt until well combined.
  • In another bowl, combine the sugar, melted butter or oil, eggs, and vanilla extract. Mix until smooth.
  • Gently fold the dry mixture into the wet mixture until just combined. Be careful not to overmix. Then, fold in the chopped or grated apples.

Baking

  • Spoon the batter into a lined muffin tin, filling each cup about two-thirds full.
  • Bake in a preheated oven at 350°F (175°C) for 20–22 minutes, or until a toothpick inserted in the center comes out clean. Allow the muffins to cool completely.

Glazing

  • Whisk the powdered sugar, milk, and additional vanilla extract in a bowl until smooth and creamy.
  • Drizzle the glaze over the cooled muffins. Serve them warm or at room temperature for the best flavor.
