Preparation
In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt until well combined.
In another bowl, combine the sugar, melted butter or oil, eggs, and vanilla extract. Mix until smooth.
Gently fold the dry mixture into the wet mixture until just combined. Be careful not to overmix. Then, fold in the chopped or grated apples.
Baking
Spoon the batter into a lined muffin tin, filling each cup about two-thirds full.
Bake in a preheated oven at 350°F (175°C) for 20–22 minutes, or until a toothpick inserted in the center comes out clean. Allow the muffins to cool completely.
Glazing
Whisk the powdered sugar, milk, and additional vanilla extract in a bowl until smooth and creamy.
