Preparation
Heat olive oil in a large pot over medium heat. Add the Italian sausage, breaking it into crumbles with a spatula, and cook until browned. Remove the sausage from the pot and set aside.
Using the same pot, add diced onion and minced garlic. Sauté for 3-4 minutes until fragrant and the onion is translucent.
Stir in the diced potatoes, dried oregano, thyme, rosemary, and the broth. Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.
Return the browned sausage to the pot. Add the chopped kale or spinach and cook for an additional 2-3 minutes until the greens are wilted.
Stir in the heavy cream, season with salt and pepper to taste. Allow the soup to rest for 10 minutes to blend the flavors before serving.
Serving
Ladle the soup into bowls and garnish with grated Parmesan cheese, a sprinkle of chili flakes, or fresh parsley if desired.
Notes
