Preparation
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a saucepan, melt the butter and brown sugar over medium heat, stirring constantly until it comes to a boil.
Once boiling, remove from heat and quickly stir in the baking soda and salt, then add vanilla extract.
In a large bowl, combine the Rice Chex, Corn Chex, and mixed nuts. Pour the toffee mixture over the cereals and nuts, and stir until everything is evenly coated.
Spread the mixture onto the prepared baking sheet in an even layer.
Bake for 10-15 minutes, stirring halfway through, until golden and crisp.
Allow to cool completely before breaking into pieces and serving.
