Tasty Street Corn Chicken Bowl

Ingredients

For the Chicken

  • 4 pieces boneless, skinless chicken thighs
  • 1 tbsp freshly squeezed lime juice
  • 1 tbsp avocado oil
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder or 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper

For the Bowl

  • 1 cup sweet corn kernels (grilled or sautéed from frozen)
  • 1/4 cup sliced red onion
  • 1/2 cup sour cream, separated
  • 2 tbsp mayonnaise
  • 1/2 cup crumbled cotija cheese, extra for topping
  • 1 tsp chili powder (for topping)
  • 3 cups prepared rice
  • Fresh cilantro leaves, for garnish
  • 1 lime lime wedges from 1 lime

Instructions

Marinate the Chicken

  • In a bowl, combine lime juice, avocado oil, chili powder, ground cumin, garlic powder (or minced garlic), salt, and pepper. Add the chicken thighs and marinate for at least 30 minutes.

Cook the Chicken

  • Heat a skillet over medium heat. Add the marinated chicken thighs and cook for about 5-7 minutes on each side or until fully cooked and no longer pink inside. Remove from the skillet and let it rest.

Prepare the Corn

  • In the same skillet, add the sweet corn and sauté for a few minutes until heated through. If using frozen corn, make sure to drain any excess water.

Make the Sauce

  • In a small bowl, mix the sour cream and mayonnaise. Add salt, pepper, and lime juice to taste.

Assemble the Bowl

  • In four bowls, place a cup of prepared rice at the bottom. Slice the cooked chicken and top it on the rice. Add sautéed corn, sliced red onion, crumbled cotija cheese, and a drizzle of the sauce.

Garnish

  • Sprinkle extra cotija cheese, chili powder, and fresh cilantro on top. Serve with lime wedges and any reserved sour cream for an extra rich flavor.

Notes

If you have leftovers, store the chicken bowl in an airtight container in the refrigerator. The components can be separated or kept combined. It will stay fresh for about 2-3 days. To reheat, simply microwave until warm, being careful not to overcook the chicken. For added flavor, try grilling the chicken instead of cooking it in a skillet. If you want extra sweetness, use fresh corn if it’s in season. Adjust the spices according to your taste; feel free to add more chili powder for a kick!
