  • 1 each green onion, chopped thin
  • 5-6 large strawberries, diced Use ripe strawberries for best sweetness.

Dressing

  • ¼ cup mayonnaise Can substitute with Greek yogurt.
  • 2 tablespoons plain Greek yogurt
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 tablespoon poppy seeds
  • ½ teaspoon pepper
  • to taste salt

Instructions

Preparation

  • Cut and chop the celery and green onion.
  • In a mixing bowl, add all the ingredients except the strawberries. Stir to combine and ensure everything is evenly coated.
  • If you prefer a creamier salad, add more mayonnaise or yogurt to reach your desired consistency.
  • Gently fold in the strawberries. To maintain their freshness, consider adding them just before serving if preparing in advance.
