  • 1 pound fresh strawberries Use seasonal strawberries for best flavor.
  • 1/2 cup sugar Adjust sweetness to taste.
  • 1 teaspoon lemon juice Brightens flavor and stabilizes mousse.
  • 1 cup heavy cream Do not overwhip.
  • 1 teaspoon vanilla extract
  • 2 large egg whites Room temperature for better whipping.

Instructions

Preparation

  • In a blender, combine the strawberries, sugar, and lemon juice. Blend until smooth.
  • In a mixing bowl, pour in the heavy cream and vanilla extract. Whip until soft peaks form.
  • In another bowl, beat the egg whites until stiff peaks form.
  • Gently fold the strawberry puree into the whipped cream. Next, fold in the beaten egg whites until well combined.
  • Spoon the mixture into serving dishes or cups. Refrigerate for at least 2 hours before serving to let it set properly.

Notes

Serve chilled, garnished with fresh strawberry slices or a dollop of whipped cream. Can also sprinkle mint leaves on top.
