Preparation
Preheat your oven to 350°F (175°C). Grease a donut pan with non-stick spray or butter.
In a mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt until evenly combined.
In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. Gently fold in the finely chopped strawberries.
Spoon or pipe the batter into the donut cavities, filling them about three-quarters full.
Baking
Bake in the preheated oven for 10–12 minutes or until the donuts are springy to the touch and a toothpick inserted comes out clean.
Allow the donuts to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.
Glazing
For the glaze, whisk together the powdered sugar, milk, and mashed strawberries until smooth. Adjust the consistency with more milk or powdered sugar as needed.
Dip the cooled donuts into the glaze and allow them to set on the wire rack. If you wish, add sprinkles for a festive touch.
Notes
Store in an airtight container at room temperature for up to two days; refrigerate for a week but may affect texture. Can be frozen for up to three months.
