Instructions
Preparation
Preheat the oven to 325°F (160°C).
In a bowl, mix graham cracker crumbs with melted butter and press the mixture into the bottom of a springform pan.
In a large bowl, beat the cream cheese, sugar, and vanilla until smooth.
Add eggs, one at a time, mixing well after each.
Stir in sour cream.
Pour half of the cheesecake batter over the crust.
Baking
Swirl in strawberry puree and jam on top, then add the remaining cheesecake batter.
Bake for 45-50 minutes, or until the center is set.
Let cool, then refrigerate for at least 4 hours before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to one week. For longer storage, freeze slices individually.
