Ingredients

Crust ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup butter, melted

Cheesecake filling

  • 8 oz cream cheese Use room temperature for smooth mixing
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup sour cream

Strawberry swirl

  • 1 cup strawberries, pureed Fresh or thawed from frozen, drained
  • 1/4 cup strawberry jam Use high-quality for best flavor

Instructions

Preparation

  • Preheat the oven to 325°F (160°C).
  • In a bowl, mix graham cracker crumbs with melted butter and press the mixture into the bottom of a springform pan.
  • In a large bowl, beat the cream cheese, sugar, and vanilla until smooth.
  • Add eggs, one at a time, mixing well after each.
  • Stir in sour cream.
  • Pour half of the cheesecake batter over the crust.

Baking

  • Swirl in strawberry puree and jam on top, then add the remaining cheesecake batter.
  • Bake for 45-50 minutes, or until the center is set.
  • Let cool, then refrigerate for at least 4 hours before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to one week. For longer storage, freeze slices individually.
