Dressing

Instructions

Cooking and Preparation

  • Cook the cheese tortellini according to the package instructions and drain.
  • In a large mixing bowl, combine the cooked tortellini, halved cherry tomatoes, chopped basil leaves, thawed green peas, and finely chopped red onion.
  • Drizzle the extra virgin olive oil and balsamic vinegar over the salad mixture.
  • Season with salt and pepper to taste and toss gently until everything is well-coated and combined.
  • Serve immediately for the freshest flavor, or let it chill in the refrigerator for 30 minutes to meld the flavors.

Notes
