Ingredients

Noodles

  • 200 grams rice noodles Cook according to package instructions.

Sauce Ingredients

  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon red curry paste
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 can (400ml) coconut milk
  • 1 cup vegetable broth
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 1 teaspoon chili flakes
  • 1/4 cup chopped cilantro For garnish
  • 1/4 cup chopped green onions For garnish
  • 1 tablespoon peanut butter
  • 1 tablespoon sriracha sauce Adjust spiciness to taste.
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

Preparation

  • Bring a pot of water to a boil and cook the rice noodles according to the package instructions.
  • Once the noodles are cooked, drain them and set them aside.

Cooking

  • Heat a large pan or wok over medium heat and add the vegetable oil.
  • When the oil is hot, add the minced garlic and ginger to the pan.
  • Sauté the garlic and ginger for about 1-2 minutes, stirring occasionally until fragrant.
  • Stir in the red curry paste and cook for another 1-2 minutes, allowing the flavors to meld together.
  • Pour in the soy sauce and sesame oil, stirring to combine with the garlic, ginger, and curry paste.
  • Slowly add the coconut milk to the pan while stirring constantly, ensuring it blends with the other ingredients.
  • Pour in the vegetable broth and stir everything together until well mixed.
  • Add the brown sugar, lime juice, chili flakes, salt, and black pepper to the sauce, stirring until the sugar dissolves.
  • Bring the sauce to a simmer and cook for 3-5 minutes, allowing the flavors to combine and the sauce to thicken slightly.
  • Toss the cooked rice noodles into the pan with the sauce until they are well coated.
  • Stir in the peanut butter, ensuring it melts into the sauce for a creamy texture.
  • Add the sriracha sauce to the noodles and mix thoroughly, adjusting the spiciness to your taste.
  • Taste the noodles and adjust seasoning if needed by adding more salt, pepper, or lime juice.
  • Remove the pan from the heat and sprinkle the chopped cilantro and green onions on top.
  • Serve the spicy coconut noodles right away, garnished with more cilantro and green onions if desired.

Serve hot, garnished with fresh cilantro and green onions. Pair with crunchy vegetables or a simple salad for a complete meal. For storage, let leftovers cool before placing in an airtight container. Refrigerate for up to 3 days. Reheat with a splash of vegetable broth or coconut milk.
