  • 1 cup full-fat cottage cheese (about 240 g)
  • 3 large eggs

  • 1/4 tsp salt (for savory)
  • 1/2 tsp cinnamon or vanilla (for sweet)
  • 1 tbsp psyllium husk or almond flour (for added structure)

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Lightly grease a loaf pan or line it with parchment paper.
  • Add the cottage cheese and eggs to a blender or food processor. Blend until smooth and creamy, about 30 seconds.
  • Pour the batter into the prepared loaf pan and tap gently to release any air bubbles.

Baking

  • Bake for 35-40 minutes, until the top is golden and a toothpick comes out clean.
  • Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  • Slice and enjoy plain, toasted, or with your favorite toppings.

Notes

Store the bread in an airtight container at room temperature for up to 3 days. For longer storage, slice and freeze it wrapped in plastic wrap or foil.
