Ingredients

Chocolate Chip Cookie Layer

  • 3/4 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 large egg
  • 1 large egg yolk discard the white
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 2/3 cup chocolate chips

Oreo Layer

  • 28 pieces Oreo cookies

Brownie Batter

  • 1/2 cup unsalted butter, cubed
  • 6 oz dark chocolate (50-70% or semi-sweet)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon salt

Instructions

Preheat the Oven

  • Preheat the oven to 350F (180C). Lightly grease a 9x13 inch (23x33 cm) pan. Line it with parchment paper, letting it overhang on the sides for easy removal later.

Make the Chocolate Chip Cookie Layer

  • In a mixing bowl, beat together the softened butter, brown sugar, and white sugar until creamy.
  • Add the egg, egg yolk, and vanilla extract. Mix until combined.
  • Gradually mix in the all-purpose flour and salt until just incorporated.
  • Fold in the chocolate chips.

Layer the Oreos

  • Press half of the cookie dough into the bottom of the prepared pan to create a base layer.
  • Place the Oreo cookies in a single layer on top of the cookie dough.

Prepare the Brownie Batter

  • In a medium saucepan, melt the cubed butter and dark chocolate over low heat, stirring until smooth. Remove from heat.
  • Stir in the granulated sugar until well combined.
  • Add the eggs, one at a time, mixing well after each addition.
  • Sift together the all-purpose flour, cocoa powder, and salt. Gradually mix this into the chocolate mixture until just combined.

Assemble and Bake

  • Pour the brownie batter over the Oreo layer, spreading it gently with a spatula.
  • Bake for 30-35 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
  • Let the brownies cool in the pan for at least 20 minutes before using the parchment overhang to lift them out and cool completely on a wire rack.

Cooling and Slicing

  • Once completely cooled, slice into squares and enjoy.
