  • 4 to 5 pounds corned beef brisket Choose a high-quality brisket for best flavor.
  • 1 unit onion, quartered
  • 4 cloves garlic, minced
  • 10 pieces baby carrots Add during the last 2 hours of cooking.
  • 1 small head cabbage, cut into wedges Add during the last 2 hours of cooking.
  • 4 to 6 cups beef broth Adjust based on preference for gravy.
  • 1 tablespoon mustard seeds
  • 2 teaspoons black peppercorns
  • 1 tablespoon chopped parsley for garnish Optional

Instructions

Preparation

  • Place the corned beef brisket in the slow cooker and cover it with beef broth.
  • Add the onion, garlic, and mustard seeds.
  • Cook on low for 8 hours or high for 4 hours.
  • Add the carrots and cabbage during the last 2 hours of cooking.
  • Once done, slice the corned beef against the grain and serve with the vegetables.
  • Garnish with parsley if desired.

Notes

Serve hot with hearty bread or potatoes. A splash of mustard or horseradish can enhance the flavors. Leftovers can be stored in an airtight container in the refrigerator for 3 to 4 days.
