  • 1 whole onion, chopped
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 1 leaf bay leaf
  • to taste salt and pepper Adjust according to preference.
  • 2 tablespoons olive oil For searing the ribs.

Cooking Steps

  • Heat olive oil in a large pot over medium-high heat.
  • Season the beef short ribs with salt and pepper and sear them in the pot until browned on all sides.
  • Remove the ribs and set them aside.
  • In the same pot, add the onions, carrots, celery, and garlic, and sauté until softened.
  • Return the short ribs to the pot and pour in the apple cider.
  • Add the bay leaf, cover the pot, and reduce the heat to low.
  • Simmer for 2-3 hours until the ribs are tender and falling off the bone.
  • Serve hot and enjoy!

Notes

Serve with creamy mashed potatoes or crusty bread. For added flavor, drizzle cooking liquid over the dish before serving. Pairs well with red wine.
