Cooking Steps
Heat olive oil in a large pot over medium-high heat.
Season the beef short ribs with salt and pepper and sear them in the pot until browned on all sides.
Remove the ribs and set them aside.
In the same pot, add the onions, carrots, celery, and garlic, and sauté until softened.
Return the short ribs to the pot and pour in the apple cider.
Add the bay leaf, cover the pot, and reduce the heat to low.
Simmer for 2-3 hours until the ribs are tender and falling off the bone.
Serve hot and enjoy!

Serve with creamy mashed potatoes or crusty bread. For added flavor, drizzle cooking liquid over the dish before serving. Pairs well with red wine.
