  • 4 pieces boneless, skinless chicken breasts
  • to taste Salt and pepper
  • 2 tablespoons olive oil for cooking
  • 2 tablespoons butter for flavor
  • 1/2 cup chicken broth for the sauce
  • 1/4 cup fresh lemon juice use fresh lemons for best flavor
  • 1/4 cup capers, rinsed and drained for a unique zing
  • Fresh parsley, chopped (for garnish)

Instructions

Preparation

  • Season the chicken breasts with salt and pepper.
  • In a skillet, heat the olive oil and butter over medium-high heat.
  • Add the chicken and cook until golden brown on both sides, about 4-5 minutes each side. Remove the chicken and set aside.

Cooking

  • In the same skillet, add the chicken broth, lemon juice, and capers. Stir well to combine.
  • Return the chicken to the skillet and simmer in the sauce for about 5 minutes, or until cooked through.
  • Garnish with fresh parsley and serve.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove over low heat to avoid drying out the chicken. You can also freeze it for up to 3 months.
