  • 1 lb Italian sausage Use spicy or sweet based on preference.
  • 16 oz gnocchi Fresh or frozen can be used.
  • 4 cups chicken broth Can substitute with vegetable broth for a vegetarian option.
  • 2 cups fresh spinach Add just before serving for best texture.
  • 1 cup heavy cream Can substitute with half and half or non-dairy milk.
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional) Grated for garnish.

Instructions

Cooking

  • In a large pot, heat olive oil over medium heat. Add diced onion and cook until translucent.
  • Add minced garlic and Italian sausage, breaking it apart while cooking until browned.
  • Pour in chicken broth and bring to a simmer.
  • Add gnocchi and cook according to package directions until tender.
  • Stir in fresh spinach and heavy cream, allowing the soup to heat through.
  • Season with salt and pepper to taste.
  • Serve hot, topped with Parmesan cheese if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. For freezing, it's best to leave out the gnocchi and add fresh when reheating.
