Topping

  • 1 cup feta cheese Crumble before use
  • 2 tablespoons honey

Instructions

Preparation

  • Preheat your oven to 425°F (220°C).
  • Slice the sweet potatoes into rounds about 1/4 inch thick.
  • In a bowl, toss the sweet potato rounds with olive oil, salt, and pepper.
  • Arrange the rounds in a single layer on a baking sheet.

Cooking

  • Roast in the oven for 25-30 minutes, flipping halfway through, until they are caramelized and tender.
  • While the sweet potatoes are roasting, crumble the feta cheese and mix it with honey in a small bowl.
  • Once the sweet potatoes are done, remove them from the oven and drizzle the honey feta mixture on top.
  • Garnish with fresh herbs if desired and serve warm.
