Roasted Parmesan Asparagus

  • 1 pound fresh asparagus Look for bright green stalks with firm tips.
  • 1 tablespoon olive oil
  • 1/4 teaspoon kosher salt Adjust to taste.
  • 1/4 teaspoon ground black pepper Adjust to taste.
  • 2 tablespoons grated parmesan cheese Can substitute with Pecorino Romano or nutritional yeast.
  • 1 tablespoon lemon juice Juice of about 1 lemon.
  • to taste red pepper flakes Optional for serving.

Instructions

Preparation

  • Preheat your oven to 425 degrees F and line a baking sheet with parchment paper.
  • Rinse and dry the fresh asparagus using paper towels. Trim the woody ends of the stems by stacking the asparagus and cutting about an inch off the bottom.

Seasoning

  • Spread the asparagus spears in a single layer on the lined baking sheet. Drizzle them with olive oil and sprinkle with kosher salt and ground black pepper.
  • Toss the asparagus to coat evenly, then sprinkle the grated parmesan cheese all over.

Roasting

  • Place the baking sheet in the preheated oven and roast the asparagus for about 10 minutes, or until tender and slightly crispy at the tips.

Serving

  • Once done cooking, remove the roasted asparagus from the oven. Squeeze fresh lemon juice over the top and, if desired, sprinkle with a pinch of red pepper flakes. Enjoy this tasty and healthy side!

Notes

Allow leftover roasted asparagus to cool completely, then place it in an airtight container. It will keep in the refrigerator for 3-4 days. For reheating, pop it in the oven or use a microwave. Make sure to wash the asparagus well to remove any dirt or sand.
