  • 1 loaf Baguette or crostini bread Slice into thin pieces.
  • 2 cups Cherry tomatoes Halved before roasting.
  • 2 tablespoons Balsamic glaze
  • 2 tablespoons Olive oil Plus extra for drizzling.
  • 1 teaspoon Salt To taste.
  • 1 teaspoon Pepper To taste.

Instructions

Preparation

  • Preheat the oven to 400°F (200°C).
  • Slice the baguette into thin slices and place on a baking sheet. Drizzle with olive oil and season with salt and pepper.
  • Roast in the oven until golden and crispy, about 5-7 minutes.

Assembly

  • Meanwhile, halve the cherry tomatoes and toss them with olive oil, salt, and pepper.
  • Spread ricotta cheese on each crostini.
  • Top with roasted cherry tomatoes.
  • Drizzle with balsamic glaze before serving.

Notes

Store leftovers in an airtight container in the refrigerator. Keep crostini and toppings separate to maintain crispness. Reheat crostini in the oven for a few minutes before serving again. For extra flavor, add herbs or red pepper flakes to the tomatoes.
