Instructions
Preparation
In a bowl, blend fresh raspberries with lemon juice and sugar until smooth. Strain to remove seeds if desired.
In another bowl, whip the heavy cream until stiff peaks form, then gently fold in the raspberry puree and vanilla extract.
If using gelatin, dissolve it in a little warm water according to package instructions and mix gently with the raspberry mixture.
Spoon the mousse into individual cups or a large serving dish.
Refrigerate for at least 2 hours to set. Serve chilled.
Notes
Store any leftover raspberry mousse in an airtight container in the refrigerator for up to three days. Avoid refreezing to maintain texture.
