Ingredients

  • 2 cups fresh raspberries Use fresh for the best flavor.
  • 1 cup heavy whipping cream Ensure it's cold before whipping.
  • 1/4 cup sugar Adjust according to sweetness of raspberries.
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice Enhances the raspberry flavor.
  • 1 packet unflavored gelatin (optional) Dissolve in warm water if using.

Instructions

Preparation

  • In a bowl, blend fresh raspberries with lemon juice and sugar until smooth. Strain to remove seeds if desired.
  • In another bowl, whip the heavy cream until stiff peaks form, then gently fold in the raspberry puree and vanilla extract.
  • If using gelatin, dissolve it in a little warm water according to package instructions and mix gently with the raspberry mixture.
  • Spoon the mousse into individual cups or a large serving dish.
  • Refrigerate for at least 2 hours to set. Serve chilled.

Notes

Store any leftover raspberry mousse in an airtight container in the refrigerator for up to three days. Avoid refreezing to maintain texture.
