  • 4 cups rice Chex
  • 1 cup peanut butter Ensure well stirred before using.
  • 1/3 cup powdered sugar For mixing with peanut butter.
  • 2 cups semi-sweet chocolate chips Melt for coating.
  • 1/2 cup powdered sugar For rolling truffles after coating.

Instructions

Preparation

  • Add peanut butter and 1/3 cup of powdered sugar to a bowl. Heat in the microwave in 10-second intervals, stirring each time until melted and smooth.
  • Place rice Chex in a large bowl and crush them into small pieces, leaving some larger pieces for texture.
  • Pour the melted peanut butter mixture into the cereal and stir thoroughly. Refrigerate for about 30 minutes to chill.
  • Melt chocolate chips in a double boiler until smooth.
  • Roll the chilled cereal mixture into 1 1/2 tablespoon-sized balls, making around 18 truffles.
  • Dip each ball into the melted chocolate, fully coating them, and place in the refrigerator to harden.
  • Once chocolate hardens, roll the truffles in the remaining powdered sugar to finish.

Notes

Enjoy with milk or coffee. Keep leftovers in an airtight container in the refrigerator for up to a week. Freeze for longer storage, separating layers with parchment paper.
