Pumpkin Delight Dessert

A creamy and rich pumpkin dessert that's perfect for gatherings and easily made any time of the year.

Ingredients

Crust

  • 1 cup Flour
  • 1/2 cup Butter (softened)
  • 1/2 cup Pecans, chopped Plus an additional 1/4 cup for topping

Filling

  • 8 oz Cream cheese (softened)
  • 1 cup Powdered sugar
  • 3 cups Whipped topping (divided) 1 cup for blending, 2 cups for topping
  • 2 1/2 cups Milk
  • 3 packages vanilla instant pudding mix (3.4 oz boxes)
  • 1 can Pumpkin puree (15 oz)
  • 1 tsp Pumpkin spice

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix together the flour, softened butter, and 1/2 cup of chopped pecans.
  • Press this mixture into a greased 9x9 or 9x13 pan.
  • Bake for 15 minutes, then remove the pan and let it cool.

Filling

  • In another bowl, blend the cream cheese and powdered sugar until smooth.
  • Add 1 cup of whipped topping and spread this mixture over your cooled crust.
  • In a different bowl, mix the milk, pudding mix, canned pumpkin, and pumpkin spice with 1 cup of whipped topping until everything is smooth.
  • Spread this pumpkin mixture over the cream cheese layer.
  • Spread the remaining 1 cup of whipped topping on top and sprinkle with the remaining chopped pecans.

Chilling

  • Let your dessert chill in the refrigerator for 3 hours or until set.

Notes

Make sure all your ingredients are at room temperature, especially the cream cheese, for easier blending. You can use a food processor to finely chop the pecans if you prefer a finer texture. To enhance pumpkin flavor, consider adding an extra teaspoon of pumpkin spice.
