Ingredients

Dry Ingredients

  • 1 3/4 cups flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1/4 tsp cloves

Wet Ingredients

  • 1 cup pumpkin puree Canned pumpkin works great.
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs At room temperature for better mixing.
  • 1 tsp vanilla

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a large bowl, mix all the dry ingredients: flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.
  • In another bowl, whisk together the pumpkin puree, sugar, vegetable oil, eggs, and vanilla extract.
  • Combine the wet ingredients with the dry ingredients. Stir until everything is well mixed.

Baking

  • Pour the batter into the greased loaf pan.
  • Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.

Notes

Serve with butter or cream cheese. Pairs well with coffee or tea. Store in an airtight container at room temperature for 3-4 days, or freeze slices with parchment paper between them.
