  • 1/2 cup Cilantro Chopped, for both sauce and rice.
  • 2 pieces Jalapeños Adjust based on spice preference.
  • 2 tablespoons Lime juice Freshly squeezed, for both sauce and rice.
  • 1 cup Rice Use any variety according to preference.
  • 1/2 cup Cream For the aji verde sauce.

Instructions

Preparation and Cooking

  • Season the chicken cutlets with cumin and paprika.
  • In a skillet, sear the chicken cutlets until cooked through.
  • In a blender, combine cilantro, jalapeños, and cream to make the aji verde sauce. Blend until smooth.
  • Cook the rice according to package instructions. Once cooked, mix in chopped cilantro and lime juice.
  • Serve the seared chicken topped with aji verde sauce alongside the cilantro-lime rice.

Notes

For extra flavor, marinate chicken in lime juice and spices for an hour before cooking. Store leftovers in an airtight container in the refrigerator for up to three days.
