Ingredients

Peach Filling

  • 4 cups fresh peaches, peeled and sliced Use ripe peaches for the best flavor.
  • 1 cup granulated sugar Adjust sweetness based on preference.
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice

Batter

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Instructions

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, mix the sliced peaches, 1/2 cup of sugar, cinnamon, and lemon juice. Spread this mixture into a greased 9×13-inch baking dish.
  • In another bowl, combine the flour, baking powder, remaining sugar, and salt. Whisk these dry ingredients together.
  • Pour in the milk, melted butter, and vanilla extract. Stir until just combined.
  • Pour the batter over the peach mixture in the baking dish. Do not stir.

Baking

  • Bake for 40–45 minutes or until the top is golden brown and a toothpick inserted comes out clean.

Notes

Serve warm on its own or with vanilla ice cream. Can also be stored in an airtight container in the refrigerator for up to three days. Reheat before serving for a warm treat.
