Cook the pasta according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper, then add to the skillet. Cook for 6-7 minutes per side until cooked through. Remove and set aside.
In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a simmer.
Stir in the grated Parmesan cheese until melted and smooth. Add the cooked pasta and mix well.
Slice the chicken and place it on top of the pasta. Garnish with chopped parsley before serving.
Notes
To store leftovers, let the pasta cool completely before transferring it to an airtight container. Refrigerate for up to 3 days. To reheat, warm the pasta on low in a skillet or microwave with a splash of cream or extra Parmesan cheese.
