Ingredients

For the pancake batter

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder

  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter

For the fillings and toppings

  • to taste Whipped cream or yogurt (optional)

Instructions

Preparation

  • In a bowl, mix flour, sugar, baking powder, and salt.
  • In another bowl, whisk milk, egg, and melted butter together.
  • Combine the wet and dry ingredients until just mixed.

Cooking

  • Heat a non-stick skillet over medium heat and pour a small amount of batter for each pancake.
  • Cook until bubbles form on the surface, then flip and cook until golden brown.
  • Once pancakes are done, fold them into a taco shape.

Serving

  • Fill each pancake taco with your choice of fruit and top with whipped cream or yogurt if desired.

Notes

Pancake tacos are best served warm, fresh off the skillet. Create a fun serving station with various toppings. Store leftovers in an airtight container in the refrigerator for up to 2 days.
