Instructions

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large oven-safe skillet, heat olive oil over medium heat.
  • Season the chicken breasts with salt and pepper, then sear them in the skillet until golden brown, about 5 minutes per side.

Cooking

  • Pour the balsamic vinegar over the chicken and bring to a simmer.
  • Add the cherry tomatoes to the skillet, mixing them in with the chicken.
  • Sprinkle mozzarella cheese on top and transfer the skillet to the oven.
