  • 1 cup cottage cheese Use plain, unsweetened for less sweetness.
  • 1/2 cup rolled oats
  • 1/4 cup almond butter You can substitute with peanut or cashew butter.
  • 1/4 cup unsweetened cocoa powder Adjust to taste.
  • 2 tablespoons honey or maple syrup Sweeten according to preference.
  • 1 teaspoon vanilla extract
  • a pinch salt
  • to taste mini chocolate chips Optional for extra sweetness and texture.

Instructions

Preparation

  • In a large bowl, combine the cottage cheese, rolled oats, almond butter, cocoa powder, honey (or maple syrup), vanilla extract, and salt.
  • Mix all ingredients together until smooth and well blended. Use a fork or a blender to break down any lumps of cottage cheese if necessary.
  • Stir in mini chocolate chips if desired.
  • Scoop the mixture and roll it into bite-sized balls using your hands.
  • Place the balls on a plate or a baking sheet lined with parchment paper.
  • Refrigerate for about 30 minutes to firm them up.

Notes

Store in an airtight container in the refrigerator for about a week. Can be frozen for longer storage—separate bites with parchment paper if freezing.
