In a large bowl, combine the cottage cheese, rolled oats, almond butter, cocoa powder, honey (or maple syrup), vanilla extract, and salt.
Mix all ingredients together until smooth and well blended. Use a fork or a blender to break down any lumps of cottage cheese if necessary.
Stir in mini chocolate chips if desired.
Scoop the mixture and roll it into bite-sized balls using your hands.
Place the balls on a plate or a baking sheet lined with parchment paper.
Refrigerate for about 30 minutes to firm them up.
