Preparation

  • In a microwave-safe bowl, heat the chocolate chips in 30-second intervals, stirring between each interval until completely melted and smooth.
  • In a separate saucepan, heat the heavy cream over medium heat until it begins to simmer. Do not let it boil.
  • Pour the warm cream over the melted chocolate. Let it sit for a minute, then stir until you achieve a smooth and glossy ganache.
  • Stir in the vanilla extract to enhance the flavor.
  • Pour the ganache into chocolate molds or a lined baking dish. Tap gently to remove any air bubbles.
  • If desired, sprinkle your chosen toppings over the ganache before it sets.
  • Refrigerate for at least 2 hours, or until fully set.
  • Once set, pop the chocolates out of the molds.
