  • 4 pieces Chicken breasts Boneless and skinless preferred.
  • 2 cups Corn Grilled or charred.
  • 1 cup Rice Cook according to package instructions.
  • 1 piece Lime Juiced for sauce.
  • 1/2 cup Crema Or sour cream as a substitute.
  • 1/2 cup Cotija cheese Crumble over the dish.
  • 1 tablespoon Olive oil For cooking chicken.
  • to taste Salt
  • to taste Pepper
  • 1 teaspoon Cumin For seasoning the chicken.
  • 1 teaspoon Chili powder Adjust based on heat preference.

Instructions

Preparation

  • Season the chicken breasts with cumin, chili powder, salt, and pepper.
  • Heat olive oil in a pan over medium heat.
  • Sear the chicken until cooked through, about 6-7 minutes per side.
  • Grill or char the corn until browned, approximately 5 minutes.
  • Cook rice according to package instructions.
  • In a bowl, combine crema with lime juice.

Assembly

  • Assemble the bowl by layering rice, sliced chicken, charred corn, crumbled cotija cheese, and lime crema on top.

Notes

Serve warm immediately after assembly. Extra lime wedges can be added for those who prefer more lime flavor. This bowl pairs well with tortilla chips or a side salad.
