Mediterranean Chickpea Patties

Ingredients

For the Patties

  • 1 can chickpeas, drained and rinsed Make sure to drain and rinse well.
  • 1/2 cup breadcrumbs Panko breadcrumbs can be used for added crunch.
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 tsp cumin
  • Salt and pepper to taste
  • Olive oil for frying Use as needed for frying.

For the Yogurt Sauce

  • 1 cup Greek yogurt
  • 2 cloves garlic, minced Add more or less garlic according to preference.
  • Salt to taste

Instructions

Preparation

  • In a mixing bowl, mash the chickpeas with a fork.
  • Add breadcrumbs, parsley, onion, minced garlic, lemon juice and zest, cumin, salt, and pepper. Mix until well combined.
  • Form the mixture into patties.

Cooking

  • Heat olive oil in a skillet over medium heat and cook the patties for about 5 minutes on each side until golden brown.

Making the Sauce

  • In a separate bowl, mix Greek yogurt, minced garlic, and salt.

Serving

  • Serve the patties warm with a drizzle of the garlic yogurt sauce.

Notes

Store any leftover patties in an airtight container in the refrigerator for up to three days. Freeze patties before frying for longer storage.
