Ingredients

Main Ingredients

  • 2 cups orzo pasta
  • 1 lb chicken breast, diced
  • 1 tbsp olive oil for sautéing
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, shredded
  • 1/2 cup feta cheese, crumbled for garnish

Seasoning

  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper

Liquid Ingredients

  • 2 cups chicken broth
  • 1 Juice of 1 lemon to brighten the flavor

Instructions

Preparation

  • In a large pot, heat olive oil over medium heat. Add onions and garlic, and sauté until softened.
  • Add diced chicken breast and cook until it turns golden brown.
  • Stir in the orzo, chicken broth, halved tomatoes, oregano, salt, and pepper. Bring the mixture to a boil, then reduce the heat and simmer until the orzo is tender.
  • Incorporate the shredded spinach and lemon juice, cooking until the spinach wilts.
  • Remove the pot from heat and gently stir in crumbled feta cheese before serving.

Notes

Serve warm, garnished with additional feta and fresh herbs. Pairs well with a green salad or grilled vegetables. Store leftovers in an airtight container for up to three days. To reheat, add a splash of chicken broth or water.
