Preparation
In a large pot, heat olive oil over medium heat. Add onions and garlic, and sauté until softened.
Add diced chicken breast and cook until it turns golden brown.
Stir in the orzo, chicken broth, halved tomatoes, oregano, salt, and pepper. Bring the mixture to a boil, then reduce the heat and simmer until the orzo is tender.
Incorporate the shredded spinach and lemon juice, cooking until the spinach wilts.
Remove the pot from heat and gently stir in crumbled feta cheese before serving.
Notes
Serve warm, garnished with additional feta and fresh herbs. Pairs well with a green salad or grilled vegetables. Store leftovers in an airtight container for up to three days. To reheat, add a splash of chicken broth or water.
