1.5poundsboneless, skinless chicken breasts (cut into bite-sized pieces)

½cupsun-dried tomatoes in oil (drained and sliced thin)

1cuplow-sodium chicken broth
2cupsheavy cream
1cupparmesan cheese (finely shredded)

Preparation
Season the chicken pieces with black pepper, Italian seasoning, and paprika. Set them aside.
Cooking
In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken and cook until golden brown, about 6-8 minutes. Once done, remove the chicken from the skillet.
Lower the heat and add butter to the same skillet. Sauté the minced garlic and sun-dried tomatoes for about 30 seconds until fragrant.
Pour in the chicken broth, heavy cream, Italian seasoning, black pepper, and paprika. Whisk until the mixture starts bubbling.
Stir in the parmesan cheese and let it melt into the sauce.
Add the cooked chicken, chopped spinach, and frozen tortellini. Stir occasionally until the spinach wilts, which takes about 5 minutes.
Notes
Serve warm right out of the skillet. Add a sprinkle of fresh parsley on top for extra flavor. Pairs well with a side salad or garlic bread. Store leftovers in an airtight container in the refrigerator for up to 3 days.
