Instructions

Preparation

  • Heat the olive oil in a medium skillet.
  • Add the sliced onions and cook for 3-4 minutes, stirring occasionally.
  • Season the chicken thighs with salt and pepper, then place them in the skillet with the onions.

Cooking

  • Cover the skillet and cook on medium-low heat for about 2-3 minutes.
  • Uncover and continue cooking until the chicken reaches an internal temperature of 165 degrees F, which takes about 10 minutes.
  • Use two forks to shred the chicken and then stir in the BBQ sauce.
  • Top the mixture with shredded cheese and cover for 1-2 minutes until the cheese melts.

Notes

Store any leftovers in an airtight container in the fridge. The chicken will stay fresh for up to 3 days. Reheat in the microwave or on the stovetop before serving again. Make sure not to overcook the chicken to keep it tender. Swap the BBQ sauce for a homemade low-carb version if you want to adjust the flavor.
