  • 1.5 lb chicken breast (2 large, patted dry with paper towels)
  • 1 Tbsp olive oil (for sautéing)
  • 2 large eggs
  • 1 clove garlic (minced)
  • 1/2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1 cup Parmesan cheese (grated)
  • 3 Tbsp all-purpose flour
  • 8 Tbsp unsalted butter
  • 2 cloves garlic (minced)
  • 1/4 cup lemon juice
  • 1/4 cup chicken broth

For Garnish

  • 1 Tbsp parsley (optional) for garnish
  • 1/2 lemon sliced (optional) for garnish

Instructions

Preparation

  • Cut the chicken breasts in half lengthwise and lightly beat them with a meat mallet until even in thickness.
  • In a bowl, whisk together the eggs, minced garlic, Italian seasoning, salt, and pepper.
  • In another bowl, combine the grated Parmesan cheese and flour.
  • Dip each chicken piece into the egg mixture, then dredge in the Parmesan mixture, allowing excess to fall off.

Cooking

  • Heat olive oil in a large non-stick skillet until hot.
  • Add the chicken pieces and cook for 4-5 minutes on each side, or until golden brown and cooked through.
  • In a separate saucepan, melt butter and add minced garlic. Cook until fragrant.
  • Add chicken broth, lemon juice, and pepper to the saucepan, and let the sauce simmer for about 2 minutes.

Serving

  • Pour the lemon butter sauce over the cooked chicken, turning to coat evenly.
  • Garnish with lemon slices and parsley if desired.

Notes

For extra crispy crust, ensure oil is hot before adding chicken. Fresh herbs can enhance the sauce flavor. Substitute chicken thighs for juicier results. Leftovers can be stored in an airtight container for up to 3 days.
