Main Ingredients

  • 1 pound sausage (Italian or breakfast) Use your favorite type of sausage.
  • 4 large potatoes, diced Any variety works, but russets add more starch.
  • 1 large onion, chopped Chop evenly for uniform cooking.
  • 3 cloves garlic, minced
  • 4 cups chicken broth Low-sodium is recommended.
  • 2 cups heavy cream For a lighter option, use half-and-half.
  • 1 teaspoon paprika Smoked paprika can be used for a different flavor.
  • Salt and pepper to taste Salt and pepper to taste Adjust seasoning at the end.
  • Fresh parsley for garnish Chopped, for serving.

Instructions

Cooking the Soup

  • In a large pot, cook the sausage over medium heat until browned. Remove and set aside.
  • In the same pot, add onions and garlic, cooking until onions are translucent.
  • Add the diced potatoes, chicken broth, and paprika. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  • Stir in the heavy cream and cooked sausage. Season with salt and pepper to taste.
  • Simmer for an additional 10 minutes.
  • Serve hot, garnished with fresh parsley.

Notes

Use a mix of potato types for a thicker texture. Cut potatoes evenly to ensure they cook at the same speed. For reheating, add a splash of broth if the soup is too thick.
