Main Ingredients

  • 1 lb ground chicken Fresh ground chicken works best.
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese Use fresh for better flavor.
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup marinara sauce For mixing into the meatloaf.
  • 1 large egg Bind all ingredients together.
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped fresh parsley Can substitute with dried parsley.
  • Salt and pepper to taste

Topping Ingredients

  • 1/2 cup marinara sauce For topping the meatloaf.
  • 1/4 cup additional breadcrumbs For a crispy top.

Instructions

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, mozzarella cheese, egg, garlic, parsley, salt, and pepper. Mix until well combined.
  • Shape the mixture into a loaf and place it in a greased baking dish.
  • Spread marinara sauce over the top of the meatloaf.
  • Sprinkle with additional breadcrumbs.

Cooking

  • Bake for 45-50 minutes or until the meatloaf is cooked through and the top is golden brown.
  • Let rest for 10 minutes before slicing and serving.

Notes

Ensure that the ground chicken is mixed gently to keep the meatloaf tender. Feel free to add Italian herbs to enhance flavor. Check internal temperature with a meat thermometer to ensure it reaches 165°F (74°C). For leftovers, let cool, wrap tightly, and refrigerate for up to 3 days or freeze for longer storage.
