Ingredients

For the Marinade

  • 2 Tbsp golden honey adds sweetness and promotes caramelization
  • 2 Tbsp soy sauce (or tamari) balances the honey and lime flavors
  • 2 Tbsp fresh lime juice delivers bright acidity
  • 1 tsp fresh lime zest adds immediate citrus punch
  • 1 Tbsp olive oil medium-heat cooking fat for searing
  • to taste Salt and freshly ground black pepper for seasoning

For the Chicken and Rice

  • 1 lb boneless, skinless chicken breasts, sliced into strips
  • 2 cups cooked jasmine rice provides a fragrant base
  • 1–2 ripe avocados, sliced adds creamy texture
  • 2 Tbsp freshly chopped cilantro or chives for herbal brightness
  • 1 tsp toasted sesame seeds (optional) for a nutty crunch

Instructions

Preparation

  • In a bowl, whisk together the honey, soy sauce, lime juice, lime zest, olive oil, and a pinch of salt and pepper until well combined.
  • Add the chicken strips to the marinade and toss to coat. Let it marinate for about 10 minutes, allowing the flavors to meld.

Cooking

  • Heat a skillet over medium-high heat until the oil shimmers. Add the marinated chicken strips and sear for 2–3 minutes on each side or until golden and the internal temperature reaches 165°F.
  • Reduce the heat to medium, pour any reserved marinade into the skillet, and cook for 1–2 minutes more, stirring to coat the chicken thoroughly.
  • Transfer the chicken to a plate and let it rest for about 3 minutes before serving.

Assembly

  • For a fun presentation, layer the rice by pressing it into a ring. Top with sliced avocados, cilantro or chives, and sesame seeds. Repeat to make four stacks.
  • Arrange the honey lime chicken alongside or atop the rice stacks, garnish with lime wedges, and serve warm.

Notes

To store leftovers, allow the chicken and rice to cool completely, then transfer to an airtight container and refrigerate for up to 3 days. Reheat the chicken in a skillet, adding fresh avocado when serving.
