Instructions
Preparation
In a bowl, whisk together the honey, soy sauce, lime juice, lime zest, olive oil, and a pinch of salt and pepper until well combined.
Add the chicken strips to the marinade and toss to coat. Let it marinate for about 10 minutes, allowing the flavors to meld.
Cooking
Heat a skillet over medium-high heat until the oil shimmers. Add the marinated chicken strips and sear for 2–3 minutes on each side or until golden and the internal temperature reaches 165°F.
Reduce the heat to medium, pour any reserved marinade into the skillet, and cook for 1–2 minutes more, stirring to coat the chicken thoroughly.
Transfer the chicken to a plate and let it rest for about 3 minutes before serving.
Assembly
For a fun presentation, layer the rice by pressing it into a ring. Top with sliced avocados, cilantro or chives, and sesame seeds. Repeat to make four stacks.
Arrange the honey lime chicken alongside or atop the rice stacks, garnish with lime wedges, and serve warm.
Notes
To store leftovers, allow the chicken and rice to cool completely, then transfer to an airtight container and refrigerate for up to 3 days. Reheat the chicken in a skillet, adding fresh avocado when serving.
