Ingredients
For the Chicken
1lbboneless skinless chicken breasts
1/4cuphoney
2tbspfresh lime juice
1tsplime zest
2clovesgarlic, minced

For the Rice and Avocado
1cupcooked rice (white or brown)
1/4cupfresh coriander, chopped
1tbsplime juice

2ripe avocados, sliced
1tbsplime juice

Instructions
Chicken Preparation
In a bowl, mix honey, lime juice, lime zest, minced garlic, salt, and pepper. This will be your marinade.
Place chicken breasts in the marinade and ensure they are well coated. Allow the chicken to marinate for at least 30 minutes. For best results, marinate for 2 hours.
Heat oil in a pan over medium heat. Once hot, add the marinated chicken.
Cook the chicken for about 6–7 minutes on each side or until fully cooked and golden brown. Use a meat thermometer to ensure the internal temperature reaches 165°F.
Once done, transfer the chicken to a cutting board and let it rest for a few minutes before slicing it into strips.
Rice and Avocado Preparation
In a mixing bowl, combine cooked rice with fresh coriander, 1 tablespoon of lime juice, and a pinch of salt. Stir well and set aside.
Prepare the avocados by slicing them in half, removing the pit, and scooping the flesh out into a bowl. Drizzle with 1 tablespoon of lime juice, and season with salt and pepper to taste. Gently toss to coat.
Assembly
Start with a layer of the flavored rice at the bottom of your stack.
Next, add a layer of sliced chicken over the rice.
Top this with the avocado mixture.
For a final touch, you may add some additional chopped coriander or lime zest for presentation.
Repeat the layers if you are making multiple servings or enjoying a larger portion.
