Honey Lime Chicken & Avocado Rice Stack

Ingredients

For the Chicken

  • 1 lb boneless skinless chicken breasts
  • 1/4 cup honey
  • 2 tbsp fresh lime juice
  • 1 tsp lime zest
  • 2 cloves garlic, minced
  • Salt (to taste)
  • Pepper (to taste)
  • Oil (for cooking)

For the Rice and Avocado

  • 1 cup cooked rice (white or brown)
  • 1/4 cup fresh coriander, chopped
  • 1 tbsp lime juice
  • Salt (to taste)
  • 2 ripe avocados, sliced
  • 1 tbsp lime juice
  • Salt (to taste)
  • Pepper (to taste)

Instructions

Chicken Preparation

  • In a bowl, mix honey, lime juice, lime zest, minced garlic, salt, and pepper. This will be your marinade.
  • Place chicken breasts in the marinade and ensure they are well coated. Allow the chicken to marinate for at least 30 minutes. For best results, marinate for 2 hours.
  • Heat oil in a pan over medium heat. Once hot, add the marinated chicken.
  • Cook the chicken for about 6–7 minutes on each side or until fully cooked and golden brown. Use a meat thermometer to ensure the internal temperature reaches 165°F.
  • Once done, transfer the chicken to a cutting board and let it rest for a few minutes before slicing it into strips.

Rice and Avocado Preparation

  • In a mixing bowl, combine cooked rice with fresh coriander, 1 tablespoon of lime juice, and a pinch of salt. Stir well and set aside.
  • Prepare the avocados by slicing them in half, removing the pit, and scooping the flesh out into a bowl. Drizzle with 1 tablespoon of lime juice, and season with salt and pepper to taste. Gently toss to coat.

Assembly

  • Start with a layer of the flavored rice at the bottom of your stack.
  • Next, add a layer of sliced chicken over the rice.
  • Top this with the avocado mixture.
  • For a final touch, you may add some additional chopped coriander or lime zest for presentation.
  • Repeat the layers if you are making multiple servings or enjoying a larger portion.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. For best texture, store the avocado separately and add it fresh when ready to serve.
