A quick and healthy vegetable soup that uses simple ingredients and can be made on a weeknight in just 30 minutes.

Ingredients

Vegetables

  • 1 tablespoon olive oil For sautéing
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 large potato, diced
  • 1 medium zucchini, diced
  • 1 can diced tomatoes Drained

Broth and Seasoning

  • 4 cups vegetable broth Or chicken broth for more flavor
  • to taste salt and pepper Adjust seasonings to preference
  • to taste fresh herbs (like thyme or parsley) For garnish

Instructions

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add onion and garlic, sauté until softened.
  • Stir in carrots and celery, cooking for another 5 minutes.
  • Add vegetable broth, potato, zucchini, and diced tomatoes.
  • Season with salt and pepper.
  • Bring to a boil, then reduce heat and simmer for 20-30 minutes until vegetables are tender.
  • Garnish with fresh herbs before serving.

Notes

For best flavor, use a good quality vegetable broth and adjust seasoning as necessary. Mash some of the potatoes for a thicker soup if desired. Use fresh herbs at the end for a brighter flavor.
