Main Ingredients

  • 1 lb ground beef Use leaner cuts for a healthier option.
  • 1 can green beans Drained
  • 1 can corn Drained
  • 1 can diced tomatoes Can use seasoned or plain.
  • 1 medium onion, chopped
  • 2 cups potatoes, sliced Any type of potatoes can be used.
  • to taste Salt and pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 cup shredded cheese (optional) For topping if desired.

Instructions

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, brown the ground beef along with the chopped onion until the beef is cooked through and the onion is translucent.
  • Add the green beans, corn, diced tomatoes, and sliced potatoes to the skillet. Stir to combine.
  • Season with salt, pepper, garlic powder, and onion powder.
  • Transfer the mixture to a casserole dish.

Baking

  • Bake in the preheated oven for 45-50 minutes, or until the potatoes are tender.
  • If using, sprinkle shredded cheese on top and bake for an additional 5 minutes until melted.
  • Serve hot.

Notes

Feel free to swap out the vegetables based on what you have on hand. Great for using leftovers!
