Ingredients

  • 6 slices bacon cooked & crumbled

Dressing

  • 1 cup Greek yogurt or light mayo
  • 2 oz cream cheese softened
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt & pepper to taste

Veggies & Cheese

  • 4 jalapeños diced (fresh, roasted, or pickled)
  • 1 cup shredded cheddar cheese

Garnish

  • Fresh herbs parsley or chives for garnish

Instructions

Preparation

  • Cook & shred chicken: Use rotisserie chicken or poach chicken breasts until tender. Shred into bite-sized pieces.
  • Prep jalapeños: Dice your choice of fresh, roasted, or pickled jalapeños, adjusting the amount based on your heat preference.
  • Make dressing: In a bowl, whisk together Greek yogurt (or mayo), cream cheese, garlic powder, paprika, salt, and pepper until smooth.

Mixing

  • Fold the shredded chicken, bacon, cheese, and jalapeños into the dressing. Mix gently until everything is evenly coated.

Chilling

  • Cover the bowl and refrigerate the salad for at least 30 minutes to allow the flavors to meld.
  • Garnish with fresh herbs before serving.
