Ingredients

For the Soup

  • 1 lb chicken breast, diced Use boneless, skinless chicken for best results.
  • 1 cup lentils, rinsed Brown or green lentils work best.
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth Use low-sodium broth if preferred.
  • 1 tsp thyme Dried thyme recommended.
  • 1 tsp cumin Adjust to taste.
  • to taste Salt and pepper Season according to preference.
  • 2 tbsp olive oil

Instructions

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add the onions, carrots, and celery, sauté until softened, about 5 minutes.
  • Stir in the garlic, cumin, and thyme; cook for another minute.
  • Add the diced chicken and cook until lightly browned.
  • Add the lentils and chicken broth; bring to a boil.
  • Reduce heat to low and simmer until lentils are tender, about 25-30 minutes.
  • Season with salt and pepper to taste. Serve warm.

Notes

Store the soup in airtight containers; refrigerate for up to 4 days or freeze for up to 3 months. Reheat before serving.
