Instructions
Preparation
In a large pot, heat olive oil over medium heat.
Add the onions, carrots, and celery, sauté until softened, about 5 minutes.
Stir in the garlic, cumin, and thyme; cook for another minute.
Add the diced chicken and cook until lightly browned.
Add the lentils and chicken broth; bring to a boil.
Reduce heat to low and simmer until lentils are tender, about 25-30 minutes.
Season with salt and pepper to taste. Serve warm.
Notes
Store the soup in airtight containers; refrigerate for up to 4 days or freeze for up to 3 months. Reheat before serving.
