Instructions

Preparation

  • Preheat oven to 400°F (200°C).
  • Peel and dice sweet potatoes, then toss with olive oil, garlic powder, paprika, salt, and pepper.
  • Spread sweet potatoes on a baking sheet and roast for 25-30 minutes, until tender.

Cooking the Chicken and Rice

  • While the sweet potatoes are roasting, cook rice according to package instructions.
