  • 1 teaspoon turmeric powder Provides color and health benefits.
  • 2 stalks lemongrass, chopped Adds a fresh citrusy flavor.
  • 4 cups chicken broth Homemade broth preferred for richer flavor.
  • 1 cup carrots, diced Adds sweetness and texture.
  • 1 cup celery, diced Provides crunch and flavor.
  • Salt and pepper to taste Adjust seasoning according to your preference.
  • Fresh herbs (parsley or cilantro) for garnish Use your choice of herbs for garnish.

Instructions

Preparation

  • In a large pot, heat some oil over medium heat.
  • Add garlic, ginger, and lemongrass, sautéing for a couple of minutes until fragrant.
  • Add carrots and celery, cooking for 5 minutes.

Cooking

  • Pour in the chicken broth and bring to a simmer.
  • Add the chicken breast and turmeric. Cook until the chicken is fully cooked, about 15 minutes.
  • Remove the chicken from the pot, shred it, and return it to the pot.
  • Stir in the couscous and cook according to package instructions.
  • Season with salt and pepper to taste.

Serving

  • Serve hot, garnished with fresh herbs.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. For a richer taste, use homemade chicken broth. You can customize the soup by adding different spices or vegetables.
