Instructions

Preparation

  • Preheat your oven to 400°F (200°C). Wash and cut the baby potatoes into halves or quarters based on their size.
  • In a large baking dish, combine the potatoes, cherry tomatoes, minced garlic, olive oil, oregano, black pepper, and a pinch of salt. Toss everything well to coat.

Baking

  • Place the feta block directly in the center of the dish, surrounded by the seasoned potatoes and tomatoes. Drizzle a bit of olive oil over the feta.
  • Bake in the oven for 35–40 minutes, stirring the potatoes halfway through for even roasting.
  • The dish is ready when the potatoes turn golden and tender, the tomatoes burst, and the feta becomes soft and slightly browned.

Serving

  • Stir the feta into the other ingredients until it creates a creamy, tangy sauce. Garnish with fresh basil or parsley.
  • Serve warm or cool for an easy and healthy meal prep.
